Ditali is the Italian word for “little thimble” and it works really well in soups, pasta salads, pasta bakes and with a number of sauces as well as classic dishes like Pasta e Fagioli. This Ditali version is double-grooved ‘birigate’ (inside and out), and is typically served with heavier sauces and even creamy tomato soups or a classic minestrone.
